ASSESSMENT OF THE QUALITY OF VEGETABLE JUICES BY THEIR PHYSICAL PARAMETERS
The article researches the physical parameters of vegetable juices: density, coefficient of dynamic viscosity, velocity of ultrasound conductivity, electric conductivity, and indicator of light refraction. On the bases of the research there has been determined the dependence of these indicators on the concentration of vegetable juices, presented by mathematic correlation. The intra-complex coefficients of correlation between them have been calculated. The possibility to determine the mass fraction of soluble dry substances in vegetable juices by their physical parameters has been determined.
