OPTIMIZATION OF THE QUALITY OF FROZEN SEMI-FINISHED PRODUCTS FROM CULTIVATED MUSHROOMS
 
The mathematical model of the quality of frozen semi-finished products from cultivated mushrooms has been worked out. Optimal concentrations and types of natural thickeners have been determined and proved, which solved the problem of stabilization of consumer properties of semi-finished product and the finished product with high consumer properties.
