СHANGE OF BERRIES MORPHOLOGICAL STRUCTURE DEPENDING ON PRETREATMENT
The effect of pre-treatment process (partial dehydration, treatment with a solution Na-CMC) and low temperature refrigeration storage of strawberries, raspberries, gooseberries and currant on the change in their morphological structure has been studied as one of the main indicators of the quality of frozen plant raw materials.
Key words: pretreatment of raw materials, frosting of berries, solution of sodium carbo xymethyl cellulose, anatomical structure.
