BIOLOGICAL VALUE OF SECONDARY RAW FISH
 
The results of studies of morphological composition of fresh fish (silver carp white and bright ones) and biological value of secondary raw fish after taking into pieces (heads, fins and bones) have been given. Amino acid composition of proteins of fish raw material has been analyzed, high biological value of secondary raw fish and prospects of its use for the production of natural structure substances has been defined.
