INDICATORS OF QUALITY CHANGES OF QUICK-FROZEN VEGETABLE AND FRUIT PRODUCTS
 
Based on the research results of consumer properties of semi-finished products of quickly-frozen aubergine, stuffed with vegetable mix, and the use of the method of correlation pleiads there has been created correlation pleiad of relations between organoleptic properties and indicators of chemical composition. There has been determined that mass fraction of acids and sugars is the indicator of changes in consumer properties of the product during long-term low temperature storage.
