The article analyzes the volumes of mayonnaise production for the last 2 years in Ukraine. There has been researched the quality of nine samples of high calorie mayonnaise "Provansal" of different trade marks. It shows the influence of quality on the competitiveness of mayonnaise, its positioning on the commodity market and satisfaction of consumer demands.
