OPTIMIZATION OF MINERAL STRUCTURE OF SWEET DISHES ENRICHED WITH HOLY THISTLE
On the basis of the use of the biologically active additives to improve a human diet quality, there has been developed the technological model of a hot sweet dish with holy thistle. The new methods of qualitative and quantitative optimization of products structure are offered. Its validity is checked on the example of a new developed dish.
