THE IMPROVEMENT OF THE PRODUCTION TECHNOLOGY OF BIOLOGICAL ACTIVE ADDITIVE MADE OF BLACK SEA MUSSELS
There has been developed and scientifically substantiated the technological diagram for obtaining a new dietary additive – protein-carbohydrate concentrated product of mussels for medical and sanitary nutrition. Its novelty is in phased use of ferments of starch-splitting and proteolytic action during the hydrolysis of the cultivated mussel. The use of barley malt instead of "Orasi" preparation enabled enrichment of the concentrate with nutrients, reduce the loss of proteolytic element in 5–7 times, decrease the duration of hydrolyze in 2–3 times and energy intensity of the process in comparison to the earlier developed technology of obtaining protein-carbohydrate mussels concentrate.
