THE COMPARATIVE ANALYSIS OF NUTRITIVE AND BIOLOGICAL VALUE OF MUSSELS FROM THE DIFFERENT SEAS
There was determined the highest energy value and biological efficiency of lipids of mussels of the White Sea seaculture in comparison to the mussels of seaculture and natural population of the Black and Japanese Seas. But the biological value of the protein of Black Sea mussels is two times higher than the same value of the White Sea mussels.
